A Celebration of Mediterranean Cuisine

At the core of Barolo’s identity is its Mediterranean menu, which embraces the richness and diversity of regional culinary traditions. The restaurant balances classic recipes with contemporary creativity, producing dishes that highlight fresh ingredients, vibrant colors, distinctive textures, and aromatic flavors.

The menu is crafted to showcase the simplicity that defines Mediterranean cooking while elevating it through thoughtful presentation and innovative combinations. Each plate is designed to complement both the surrounding landscape and the relaxed atmosphere that makes Santorini one of the world’s most sought-after destinations.

The Vision of Executive Chef Aggelos Manousakis

Leading the kitchen is Executive Chef Aggelos Manousakis, whose passion for gastronomy has shaped Barolo’s culinary direction from the very beginning. After graduating in culinary arts from IEK Omiros in Athens, he built extensive experience as an executive chef in some of Athens’ leading catering establishments before working as chef de cuisine in a Thai restaurant.

His move to Fira marked the beginning of Barolo’s culinary story. Drawing inspiration from Mediterranean traditions while embracing creativity, Chef Manousakis focuses on expressing his passion through every dish. His cuisine makes extensive use of Santorini’s local treasures, transforming regional ingredients into refined gastronomic creations.

The Ingredients That Define Santorini

One of Barolo’s distinguishing characteristics is its appreciation for the island’s unique agricultural heritage. Santorini’s volcanic soil, dry climate, and centuries-old farming traditions produce ingredients found nowhere else in quite the same way.

Santorini Cherry Tomatoes

Among the island’s most famous products are the Santorini cherry tomatoes. Cultivated in volcanic soil rich in minerals and nourished by moisture captured from evening sea fog, these tomatoes develop concentrated flavor and remarkable sweetness. Traditional harvesting and natural drying methods continue to preserve the authenticity of this celebrated local ingredient.

Caper (Kapari)

Wild capers flourish on the steep slopes and stone terraces of Santorini. Both the flower buds and the leaves are harvested, offering delicate spicy flavors while reflecting generations of local cultivation practices.

White Eggplant

The rare white eggplant of Santorini is prized for its naturally sweet flavor and minimal bitterness. Because it contains fewer seeds, it absorbs less oil during cooking, making it a versatile ingredient in traditional island cuisine.

Santorini Fava

Produced from the seeds of Lathyrus clymenum, Santorini fava has a history stretching back more than a thousand years. Cultivated and processed entirely on the island using longstanding local methods, it develops a velvety texture and naturally sweet taste that has become synonymous with Santorini’s culinary identity.

Chlorotiri Cheese

Chlorotiri is one of Santorini’s most traditional cheeses, typically made from goat’s milk and enjoyed fresh. Produced in limited quantities, it remains a local specialty and pairs particularly well with the island’s white eggplant.

A Destination for Wine Enthusiasts

Wine has been intertwined with Santorini’s history for more than 3,500 years. The island’s volcanic terrain, sea air, and distinctive growing conditions have produced vineyards unlike any other in the Mediterranean.

Barolo embraces this heritage by pairing its Mediterranean cuisine with Santorini’s aromatic local wines. Guests have the opportunity to explore renowned varieties such as Assyrtiko, Nychteri, and the sweet Vinsanto, each expressing the island’s unique terroir and centuries-old winemaking traditions.

Dining Above the Volcano

The setting is an integral part of the Barolo experience. Positioned above the caldera, diners enjoy uninterrupted views of the Aegean Sea, the volcanic landscape, and the timeless Cycladic architecture that defines Santorini.

The combination of elegant surroundings, carefully prepared cuisine, and attentive hospitality creates an atmosphere suited for romantic dinners, special celebrations, or simply enjoying the beauty of the island while savoring Mediterranean flavors.

Every visit is shaped by Barolo’s commitment to selecting fine ingredients, honoring Mediterranean culinary traditions, showcasing Santorini’s exceptional local produce, and delivering a hospitality experience designed to leave a lasting impression.
